Celebrate Father’s Day With a Grill Enthusiast’s Favorite Recipe

We’ve partnered with grilling enthusiast @tiffanymamone to share a super versatile and easy-to-make side dish recipe that you can prep on the grill alongside your burgers and hot dogs. “My crew of boys and I enjoy spending time together grilling and making memories around the dinner table.” To complement the meal she and her sons made for her husband, Tiffany chose a grilled corn salad recipe because it’s “light, healthy and goes great with any main dish like burgers or hot dogs!” She also notes that it can be easily customized and it’s super easy for the kids to help with. Win-win!

Grilled Corn Salad

Ingredients

  • 4 ears of corn, shucked and silks removed
  • ¼ cup olive oil
  • 1 cup cherry or grape tomatoes, quartered
  • 1 English cucumber, sliced and quartered
  • ½ medium red onion, diced
  • ¼ cup chopped fresh parsley
  • 2 tablespoons apple cider vinegar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

Directions

  1. Preheat your grill. Lightly brush the corn with 2 tablespoons of olive oil.
  2. Grill corn for 8-10 minutes, rotating a few times for even charring. Then remove to a plate.
  3. Once the corn has cooled off, shave kernels and combine with the rest of the ingredients.
  4. Refrigerate for 1 hour and enjoy!
